What is the Global Kitchen?

Most recipes on Nomisto are Indian, but home cooks rarely eat only one cuisine. The Global Kitchen is where we put dishes from elsewhere that earn their place on a weeknight table: a Mediterranean grain bowl, a Middle Eastern dip, a Mexican-style taco. It is deliberately small and practical rather than a survey of world cuisines, and each recipe is written to the same standard as the Indian ones, with grams and visual cues.

Why are these dishes here?

Several fit the site’s themes. Shakshuka poaches eggs in a spiced tomato and pepper sauce, so it shares the onion, tomato and spice logic of the bhuna curry base, which is why that guide links to it. Classic hummus and quinoa chickpea salad bring chickpeas into light vegetarian cooking. Zesty fish tacos and grilled chicken cobb offer high-protein mains, and the Mediterranean meal plan packages a week of lunches.

Which techniques show up most?

Fast, hot cooking: searing fish for about 3 minutes a side to 63°C, pan-frying pressed tofu until crisp for tofu broccoli stir-fry, and boiling pasta until just done for basil pesto pasta. Are these dishes authentic to their home cuisines?

They are home-style versions rather than restaurant or regional-specialist recipes. Where a technique matters, such as whipping tahini for hummus or poaching eggs in the sauce for shakshuka, the recipe explains it.

Which Global Kitchen recipes are vegetarian?
